cooking summary - january

January 2023 / cooking

Overall I made 43 things in January.

January 1

Hummus

Chicken and rice

4 legs (2.5 lbs), which was maybe 1 leg short but made for a great rice:chicken ratio.

Roasted Vegetables

Zucchini, quartered length-wise.

I've cooked this 26 times before

January 2

Roasted Cauliflower

January 3

Chicken and rice and lemon soup (Dinner)

Got home too late, this took too long. Everyone was freaking out by the end.

Nice thing about this soup is that it starts fast- part out the chicken, get it in water and on the stove. But even with that it takes maybe 1.5 hours to come up to speed and cook and everything else, so it was late when it was started.

Brussels sprouts

My streak continues

January 4

Sauteed Mushrooms

January 5

Made ahead for the week.

I used short ribs instead of lamb (I don't have a lamb-liking family). Overall I'd call this a hit - the kids were skeptical, but when they tried it they liked it. My wife and I liked it quite a bit. It lasted for 2 nights with the rice pilaf.

Fried Egg (Breakfast)

Prosciutto Sandwich (Kid's Lunch)

With butter

Made a simpler form of this - toasted the rice, added the onion and celery and a bit of salt, cooked it with chicken broth, and then added a bit of chopped Italian parsley at the end. Fancy rice, what's not to like!

January 10

Roasted Brocolli

Knocked it out of the park. 350 or 400 with convection, not for very long - but just the right amount of salt and olive oil to get it crispy and flavorful.

I liked this quite a bit. Pretty easy, except for the manual work in making the roux but that came together pretty quick (not the 5-10 the recipe said, more like 15, but still that's not bad). I shredded the chicken back into the pot and heated it up that way, as I'd made this a few days ahead, and served it with pasta. I think it'd be better with grits. Still, really nice flavor, with a nice sauce, for a recipe that mostly cooks itself.

January 12

Brussels Sprouts

My veggies are on a roll. Another great one, 400 with convection for maybe 10 minutes (but they were really small).

Pasta

Just buttered pasta. Not very exciting!

January 18

Roasted Brocolli

My streak of perfect vegetables ends - too much salt.

Roasted Squash

Butternut Squash, roasted at 375 with convection. I felt like it was burning without getting crunchy; maybe not enough oil? Not my best work.

Parenting puts you in a weird spot. My son really really wanted this, but I didn't think it would go with the chicken & ginger so I said 'no'. Then I realized, why am I not giving him vegetables that he'll eat and food that he wants? So I made this too, even though I'd already roasted brocolli.

January 20

Dry sauteed green beans

Back to normal (totally dry to start, oil and salt near the end) and better for it

January 22

Ham and Bean Soup

From <https://www.seriouseats.com/most-popular-recipes-of-2022-6892264>

With rancho Gordo snowcap beans. I thought this was great - tasted like I remember soup from my childhood - but no one else liked it. What can you do! It was great I'm just going to eat all of it. I made this for the next few days.

Friday Night Meatballs (Dinner)

Looks like enough for 4 nights, so I'm going to freeze half of it. With scroungy sides - some sliced carrots, leftover roasted butternut squash.
